Vegan Lunch Ideas On The Go

Today I am showing you some super easy portable vegan lunch ideas for taking to school/university/college/work! I hope you enjoy the recipes (full recipes below!)


Pesto Chicken Pita: Pesto (makes approx. 1/2 cup pesto): 1/3 cup almonds 1 cup fresh basil 2 tbsp lemon juice 2 tbsp nutritional yeast 2 tbsp olive oil 1 clove garlic


Pita:
1 whole wheat pita, cut in half Vegan Chicken (as much as you want/need) spinach sprouts red bell pepper Veggie Bagel Sandwich:
1 everything bagel, cut in half 2 tsp vegan mayo or hummus sliced cucumber sliced tomato sprouts sliced red onion sliced vegan cheese Quinoa & Falafel Salad: Quinoa Salad: 1-1/2 cups cooked quinoa 1/3 cucumber, diced 1/4 cup chopped red bell pepper 2 tbsp chopped green onion Yves falafel or other store-bought falafel Sauce: 2 tbsp tahini 1 tbsp lemon juice 1-2 tbsp water 1 tsp soy saue 1 tsp maple syrup Berry Smoothie & Granola 1 frozen banana 1 cup mixed berries 1/2 cup orange juice (more if needed) 1/3 cup granola
