Baked Nut Cheese recipe:
Juice of 2 lemons 1 1/2 cups cashews, soaked overnight or for at least 6 hours 1 tsp salt 1 1/2 tbsp nutritional yeast 2/3 cup water 1 garlic clove
1/ Blend, pour into a cheese cloth and chill overnight or for at least 6 hours 2/ Shape it and cover it in whatever you fancy (we liked all purpose seasoning) 3/ Bake at 180˚C for 40 mins 4/ Let it cool 5/ Eat the whole wheel on jam on toast Alfredo recipe: 6 cloves roasted garlic (just wrap in tin foil and bake) 2 cups of cauliflower florets 1 veggie stock cube 1 3/4 cups water 1 tbsp nutritional yeast 1/3 cup cashews 1/2 tsp salt Pasta of choice 1/ Throw everything into a pot and cook until the cauliflower is softened 2/ Blend 3/ Pour on top of pasta, gnocchi, your mouth, your dog’s mouth Nacho Cheese recipe: 1 cup cooked potato 1 cup cooked sweet potato 1 1/4 cup plant milk (or water) Juice of one lemon 1 tbsp tomato paste 1 1/2 tsp tapioca starch 1 tsp garlic powder 1 tsp onion powder 1 tsp smoked paprika 1 tsp chilli flakes 2 tbsp nutritional yeast 1/2 tsp salt 1/ Blend everything together 2/ Pour into a pot and cook and whisk and cook and whisk 3/ Keep going until it’s as thick as you desire 4/ Pour over nachos (hopefully nicer looking than ours) or pour into a bowl and dip corn chips (if you’re cool) or veggies (if you’re lame) Mozzarella recipe: 1/4 cup cashews 1 cup water 1 tsp onion powder 1 tsp garlic powder 1 tbsp nutritional yeast 3/4 tsp salt 2 tbsp tapioca starch 1/ Blend everything together 2/ Pour into a pot and cook and whisk 3/ Reduce it until it’s fairly thick 4/ Pour into a bowl and chill for at least 6 hours 5/ Plop it on pizza, in between sheets of lasagna, down your throat Parmesan recipe: 1/2 cup cashews 2 tbsp nutritional yeast 1 tsp onion powder 1 tsp garlic powder 1 tsp all purpose seasoning 1/ Blend and eat
